The South Beach Diet was created by cardiologist Arthur Agatston, MD, who actually discovered this weight loss plan while trying to develop a heart-healthy meal plan for his own cardiology patients. This diet does have three separate phases, and while it restricts the consumption of “bad” fats and carbs, this diet does encourage that dieters regularly eat “good” carbs and fats.

Plan in Focus
The first phase of the South Beach Diet is the most restrictive. Though, this phase only lasts two weeks and requires that dieters avoid foods such as dairy, sugars, breads, grains, potatoes and alcohol. This phase is meant to break the body’s insulin resistance and make it start burning extra fat. The foods that are mostly consumed during this phase are lean meats, nuts, vegetables, eggs, olive oil and nuts.

The second phase of the South Beach Diet reintroduces some foods that were restricted in Phase one, and dieters will find that they are now allowed to gradually eat whole grains and fruit. There is no time limit on this phase and dieters are meant to stay on it until they reach their weight loss goal.

The final phase is the maintenance phase and it allows for three servings of whole grains and three servings of fruit a day. While following the South Beach Diet, in Phase 3 dieters are still urged to avoid “bad” fats and carbs and to stick to fats and carbs that the creator of this meal plan has deemed as good. One of the benefits of the maintenance phase is that it does not require calorie counting or limited food servings.
